I had a friend tell me about making these and decided to give them a try. It's always nice to spice up our usual boring breakfast routine...These were really easy to make but tasted delicious.
Banana, thinly sliced
*Prepare pancake mix as directed on package. Add in coconut, depending on how much batter you have--I prepared enough mix to make 12 pancakes, so I added about 3/4 cup.
*Pour batter onto preheated griddle and arrange banana slices on top. When you flip them the bananas will caramelize. Yummy! Top with syrup and cool whip or fresh fruit.
