Creamy White Chicken Enchiladas


 The Lazy Dish has done it again! These are delicious and super easy for a weeknight!


Ingredients

  • 8 flour tortillas (soft taco size)
  • 3 cups shredded chicken (I use Rotisserie)
  • 2 cups shredded monterey jack cheese (or pepper jack)
  • 4 ounces softened cream cheese
  • 2 tsp garlic powder
  • tbsp butter
  • 3 tbsp flour
  • 1 tbsp taco seasoning (NOT the whole packet)
  • 1 (14.5oz) can of chicken broth (2 cups)
  • 3/4 cup sour cream
  • 1 (4oz) can of diced green chiles

Instructions

  1. Preheat oven to 350 degrees and grease a 9x13 baking dish.

  2. In a medium size bowl, mix the chicken with the cream cheese, garlic powder and HALF of the shredded cheese (about 1 cup). 

  3. Evenly stuff the mixture into your flour tortillas and place them into your prepared pan. 

  4. In a sauce pan over medium heat, melt the butter and then stir in the flour and taco seasoning. Add the chicken broth and whisk until smooth; allow the mixture to heat up for a few minutes until warm. Add 1/2 a cup of the shredded cheese and whisk until well incorporated. 

  5. Stir in the sour cream and can of chiles; whisk for just a minute or until the sour cream is completely dissolved, but do not allow it to boil.

  6. Pour the sauce over the enchiladas and top with remaining cheese. 

  7. Bake for 22-25 minutes and then switch the broiler on for a few minutes to brown the cheese. 

  8. The adults in the family like to serve these with hot sauce! Refried beans and spanish rice are also delicious on the side.

Chicken Cordon Bleu Bundles

  • This comes from One Krazy Cookie. My friend made it and raved about it, so here ya go! These would be perfect for kids' school lunches of for a dinner on the go!
  • 2 cans of crescent rolls
  • 1 package of thin sliced ham (lunch meat)
  •  slices of swiss cheese
  •  2- 2 1/2 cups shredded cooked chicken
Preheat oven to 375 degrees. Open the cans of crescent rolls. Separate and unroll the triangles.  You can either work on them all at once or in groups.  I made them in groups of 4. Lightly grease your cookie sheet.
  • .Layer one or two slices of ham, 1 slice of cheese.
  •  Then add a small amount of shredded chicken on top. 
  • Fold the edges of the ham around the cheese and chicken.
  • Starting at the fat end of the triangle, roll the crescent dough around all the fillings as tight as you can and continue rolling to the point of the triangle. 
  • Bake at 375 degress for 18-20 minutes or until lightly browned.

Easy Mac-n-Cheese

This is really gooey, delicious mac-n-cheese that is very easy to make. Definitely a great side dish for my kiddos!

8 ounces (2 cups) elbow macaroni
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1 dash black pepper
2 cups milk
2 cups cheddar cheese, shredded (8oz)
*Cook macaroni according to package directions.
*In medium saucepan, melt butter over medium heat; stir in flour, salt and pepper; slowly add milk.
* Cook and stir until bubbly. 
*Stir in cheese until melted.
*Drain macaroni; add to cheese sauce; stir to coat.

Cheese Ball

Best cheese ball ever. My mother-in-law is amazing and this is what she gives out to neighbors each year as a New Year's treat. I am going to steal her idea because this tastes amazing and is so easy!

16 oz. cream cheese
2 bottles old English cheese (small glass jars of cheese as shown in above picture)
1/2 bottle Real Bacon Pieces
1 c. finely grated cheddar cheese
1 tsp. Worcestershire sauce
Chopped pecans (about 2 cups)

*Mix ingredients in mixer until smooth. Roll in chopped nuts to cover outside. (Makes one large or three small balls). Store in refrigerator.
