Spinach Pancakes

My kids woofed these down and none of us could even tell the difference between these and regular pancakes! Totally worth it if you can squeeze in some greens somewhere with your kids, am I right?

1 cup packed fresh spinach (I had a bag of frozen and that worked, too)
1 cup buttermilk
1 large egg
1 T. oil
1 cup white whole-wheat flour
1 T. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt

*In a blender, combine spinach, buttermilk, egg, and oil until smooth, 30 seconds.
*In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Whisk wet ingredients into the dry ingredients until just combined.
*Cook over greased griddle!
