Jeannette's Pumpkin Chocolate Chip Cupcakes

I totally stole this picture and recipe off of my friend, Jeannette's, blog. Totally worth it though. :) She is amazing, creating her very own cupcakes! And perfect for Thanksgiving w/ the pumpkin! Thanks, Jeannette!

1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1-1/4 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp cloves(optional)
2 eggs
1 cup pumpkin
1/2 cup sugar
1/2 cup brown sugar
1/2 cup oil
*Preheat oven to 350. First combine all dry ingredients and sift/mix. In separate bowl combine all other ingredients and mix. (The recipe doesn't call for vanilla, but I added just a little bit) Next combine dry and wet ingredients and mix. Add chocolate chips- however many you want. Set cupcake batter to the side.

Cream Cheese Cupcake Filling
8 oz. cream cheese
1/3 cup sugar
1 egg
*Mix room temperature cream cheese with sugar thoroughly. And then add the egg and mix.

*Spray your cupcake tin with cooking spray and put in a spoonful of pumpkin mix, then a small spoonful of cream cheese mix, and then top with another small spoonful of pumpkin mix. Bake for 20-25 minutes. Cool for 20 minutes. This next step is completely optional, but oh sooo good!

Chocolate Gan ache
1/2 cup heavy cream
8 oz. semi-sweet chocolate chips
*Stir the ingredients over a pot of simmering water until melted and creamy. Once your cupcakes have cooled dip the tops of the cupcakes into the ganache and let dry for 10-15 minutes. And then ENJOY!!
