Dough for Bread/Pizza Dough/Breadsticks/Cinnamon Rolls, etc.

This turned out awesome! I actually made a batch of cinnamon rolls and a loaf of bread and halved the recipe. (I have put the halved amounts in parentheses). It turned out perfect! Thanks, Heidi for this awesome recipe!

10 1/2 c flour (5-1/4 c)
1/2 c sugar (1/4 c)
1 tsp salt (1/2 tsp)
3 rounded tbsp saf instant yeast (1-1/2 Tbsp)
---mix together---
add
3 tbsp lecithin (1-1/2 Tbsp)
4 c hot water (2 c)
knead for 5 min. in mixer or by hand.

It is not necessary to let the dough rise, but I have found that if I let it sit for 15 min then the bread is a little softer. Depending on what you are cooking you cook at 400 for 12-20 min. Breadsticks usually about 12 min. Pizza about 20 min and bread about 15 min. Just kind of keep an eye on it.

***Also this recipe makes 4 different batches of whatever. If you have a very large kitchenaid, it will make this whole recipe. Mine is just regular size so I cut the recipe in half and make either two pans of pizza, or like last night i did 1 pan of pizza and a loaf of bread.

***Lecithin you can buy at kitchen kneads. It is a great food storage item because it never expires! And it is only $8 for a big bottle of it and you don't use very much at once so it lasts a long time. But when you do buy it make sure you get the lid that goes with it for like 20 cents cause the stuff is very sticky and the lid helps you squeeze out the amount you need. (Don't try and measure it, cause you'll never get it off your measuring spoon. Just eyeball it)
