Tortellini Salad

I found this recipe on Just Cook. It was light and healthy, perfect for a light lunch. Just a warning, though, it is pretty spicy. Next time I'll tone it down for my little kids.

1 (9-ounce) package fresh three-cheese tortellini

2 teaspoons olive oil

    2 teaspoons bottled minced garlic
    1/2 to 3/4 teaspoon crushed red pepper
    2 cups cherry tomatoes, halved
    1/4 cup chicken broth or vegetable broth
    1 tablespoon chopped fresh basil
    1/4 teaspoon salt
    1 (6-ounce) package fresh baby spinach

    *Cook tortellini according to pkg directions. While it's cooking, heat oil in large nonstick skillet over med-high heat. Add garlic and red pepper; saute 30 seconds.
    *Add tomatoes, chicken/veg broth, basil, salt, and spinach to skillet; cook 2 minutes or until spinach wilts. Stir in tortellini; cook 1 minute. This is only 254 calories for a 1-1/2 cup serving!
