Cowboy Quesadillas

I found this recipe on Best Bites and thought it was a great, quick dinner. I did not add everything that they did, but used the same idea. You can use lots of variations for this and add whatever you have leftover in your fridge, too!

-Cooked, cubed chicken or shrimp
-Beans (I used pinto and black)
-Green onion, sliced
-Tomatoes, cubed (I used yellow and red)
-Corn
-BBQ sauce, about 1/2 cup

*Put everything in a bowl and gently stir. Place about 1/3 cup of the mixture onto tortillas, sprinkle with cheese, and fold in half. Place on nonstick skillet until cheese is melted. Cut into triangles with a pizza cutter.
