Doughnuts

My neighbor brought these over to us the other night--what a great treat!! She emailed me the recipe so I could share it with all of you!

Heat 2 c. milk, then stir in 2 tsp. yeast, and 1 Tbsp. + 1 tsp. sugar. After yeast is dissolved, add 1 egg, 1/3 c. mashed potatoes, 1/2 c. shortening, and 5 c. of flour. Mix together, then sprinkle last cup of flour while mixer is going. Let rise for an hour. Roll out 1/2 inch thick and cut out doughnuts. Deep fry doughnuts. When batch in pan is flipped over for other side, start glazing the batch before them.

Glaze: 4 c. powdered sugar and hot water til as thin as you want with whisk.

I did not like this frosting recipe, so I added vanilla, milk and little butter and some water. So I just played with it!
