This isn't necessarily a super easy recipe, but definitely worth trying. I have found that a lot of grocery stores are having sales on nuts right now, so grab those macadamia nuts while you can for a good price!
2-1/4 c. flour
1 tsp. baking soda
1 tsp. salt
3/4 c. packed dark brown sugar (I used light)
3/4 c. sugar
3/4 c. butter
2 large eggs
2 tsp. vanilla extract
2 c. white chocolate chips (12 oz.)
1 c. chopped macadamia nuts/pecans
*Preheat oven to 325 degrees. Combine flour, soda, and salt in medium bowl. Mix well with wire whisk; set aside.
*In a large mixer blend sugars at med speed. Add butter and mix to form a grainy paste, scraping down the sides of the bowl. Add eggs and vanilla, nad mix at a med speed until just blended. Do not overmix. Add flour mixture, white chips, and nuts, and blend at low speed until just mixed.
*Drop by rounded tablespoons onto an ungreased cookie sheet, 2" apart. Bake 12-14 mins. Transfer cookies immediately to a cook surface with a spatula. (Cookies will be moist on top but slightly crispy on the bottom.) Allow cookie sheet to cool between baking. Yields: 4-5 dozen.
