Betty Crocker's Homemade Caramel


This is really easy and turns out super soft and delicious!
2 c. sugar
3/4 c. light corn syrup
1/2 c. butter/margarine
2 c. half & half, divided
*Butter an 8x8 pan.
*Heat sugar, syrup, margarine/butter, and 1 c. half & half over med heat until boiling; stir constantly.
*Stir in remaining half & half. Cook over med heat to 245 degrees on candy thermometer. Immediately spread into pan to cool.
*To use caramel on candies or plain, first spray a metal spoon with Pam and then it will scoop out easily.
