Crepes

I always thought crepes would be hard, but seriously they were the easiest thing ever! My husband requested a "breakfast dinner" last night so we had these. For the filling I just mixed some fresh raspberries with strawberry yogurt, and sprinkled powdered sugar on top. SO YUMMY!
1-1/2 c. flour
1/2 tsp. baking powder
2 c. milk
2 Tbsp. melted butter
1 Tbsp. sugar
1/2 tsp. salt
2 eggs
1/2 tsp. vanilla
*Mix flour, sugar, baking powder and salt in med mixing bowl. Add milk, melted butter, vanilla, and eggs. Beat with a wire whip or hand beater until smooth.
*Lightly butter a 6-8 inch skillet. Rotate immediately until a thin film of batter covers the pan bottom. Allow to cook until light brown and top begins to set. Loosen edges with spatula, turn and allow second side to cook briefly.
*Turn out onto wax paper and cover with another piece of wax paper. Keep covered to prevent drying.
*Fill with fresh fruit, pie filling, peanut butter, powdered sugar, eggs & bacon, meat/veggies, etc. Top with whipped cream or chocolate syrup, if desired.
Yield: 10 crepes
