Oatmeal Waffles

I love breakfast foods for dinner, so tonight we tried out this AMAZING, homemade waffle recipe. I used my belgian waffle maker and, as you can see, we put fresh strawberries on top. YUM!
1-1/2 cups flour
1 cup rolled oats (quick-cook)
1 Tbsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
2 eggs, slightly beaten
1-1/2 cups milk
6 Tbsp. butter, melted
2 Tbsp. brown sugar
1 Take a large mixing bowl and stir in flour, baking powder, cinnamon, and salt. Add oatmeal and make sure dry ingredients are mixed well; set bowl aside.
2 In another bowl mix eggs, milk, butter, and brown sugar until all are thoroughly blended.
3 Add liquids to the flour mixture and mix until smooth.
4 Lightly grease waffle maker and pour batter onto preheated grids. Yields: 4 servings
