Egg "Muffins"

These turned out AMAZING!! I was a little hesitant, so as you can see, I only made 1 to try out the recipe. Now go and try 'em!
12 thin slices lunchmeat (the recipe called for roast beef, I used turkey)
6 slices American cheese slices, quartered (I used shredded cheddar)
12 eggs
*Press one slice of lunchmeat onto the bottom and up the sides of each greased muffin cup, forming a shell.
*Arrange 2 pieces of cheese in each shell, or sprinkle some shredded cheese in the bottom.
*Break 1 egg in each cup.
*Bake, uncovered, at 350 for 15-20 mins, or until eggs are completely set.
YIELD: 6 servings
