Cajun Chicken Fettuccine
The pictures do not do this dish justice--it's a really pretty meal that is YUMMY!! We're having company over for dinner this weekend and my husband has already requested that I make this.
8 oz. uncooked fettuccine
1 large sweet onion, halved and sliced
1 med green pepper, cut into 1/4-in. strips
1 med red pepper, cut into 1/4-in. strips
2 Tbsp. olive oil
2 cups cubed, cooked chicken
4 tsp. Cajun seasoning (I bought a packet of Cajun shrimp seasoning)
1 tsp. minced garlic
1 jar (16 oz.) Alfredo sauce
1/2 cup spaghetti sauce
2 cups (8 oz.) shredded mozzarella cheese
1/2 cup grated Parmesan cheese
*Preheat oven to 375 degrees.
*Cook fettuccine according to pkg directions. Meanwhile, in a large skillet, saute onion and peppers in oil until tender (just until the edges start to brown).
*Add the chicken, Cajun seasoning, and garlic; heat through.
*Transfer to a large bowl. Drain fettuccine; add to chicken mixture. Stir in Alfredo and spaghetti sauces.
*Transfer to a lightly greased 9x13 baking dish. Sprinkle with cheeses.
*Cover w/ foil and bake for 15 mins. Uncover; bake 10-15 mins longer, or until golden brown.
YIELD: 8 servings
