Pioneer Woman's Sheet Cake Pancakes


 Okay we have made sheet pan pancakes a million times, but this is THE best recipe! Saving because we are obsessed! Thanks to Pioneer Woman!

Ingredients 

2 1/4 cups all-purpose flour 

1/4 cup granulated sugar 

1 Tbsp. baking powder 

1 tsp. baking soda 

3/4 tsp. kosher salt 

2 1/4 cups whole buttermilk, room temperature 

2 large eggs, room temperature 

1/2 cup (8 Tbsp.) unsalted butter, melted and divided, plus more for serving 

1 tsp. vanilla extract 

1/2 cup blueberries 

1/2 cup sliced strawberries 

1/2 cup semisweet chocolate chips 

1/2 cup chopped pecans 

Maple syrup, to serve 

Directions 

YIELDS: 10 - 12 serving(s) 

1 Preheat the oven to 425°F. In a large bowl, stir together the flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together the buttermilk and eggs. Add the buttermilk mixture to the flour mixture, along with 4 tablespoons of the melted butter and the vanilla. Stir the batter together until just combined. 

2 Brush an 18-by-13-inch sheet pan with 2 tablespoons of the melted butter, then pour in the pancake batter. Sprinkle the batter with the blueberries, strawberries, chocolate chips, and pecans, as desired. 

3 Bake until golden, 15 to 18 minutes. Brush the remaining 2 tablespoons of melted butter over the surface of the pancake. 

4 Cut into squares and serve with more butter and maple syrup.

Chia Seed Pudding

This came from Chelpostpics and is the best version I've had of chia seed pudding!

Combine in Blender:

1 can coconut milk

2 cups vanilla Greek yogurt 

1 scoop collagen

1 tsp. vanilla extract

4-6 dates or maple syrup to sweeten

*Optional-add your favorite protein powder

I divide this into 5 jars evenly, then stir in 1/4 cup chia seeds into each jar. Let sit overnight in fridge before eating, then top with fruit and honey. 

Baked Eggs

 

The Girl Who Ate Everything did it again. This one is a winner! I love love the texture of it. I meal prep this on Sundays for us to eat off of during the week. My teenagers love it and I love that they're getting some good healthy protein to start their day. 

Ingredients

  • 1 tablespoon butter, melted
  • 12 eggs, beaten
  • 1 lb (16 ounces) shredded Pepperjack cheese, (other types of shredded cheese can be used like cheddar cheese)
  • 1 (16 ounce) container cottage cheese
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt

Instructions

 

  • Preheat oven to 350 degrees and brush a 9x13 baking pan with the melted butter.
  • Whisk together the eggs, pepperjack cheese, cottage cheese, flour, and salt in a large bowl. Pour the mixture into the prepared baking dish.
  • Bake in the preheated oven until eggs are completely set about 50-60 minutes. Start checking it around 45 minutes. Cut into squares and serve with salsa, sour cream, guacamole, tomatoes, or onions if desired.

Notes

This recipe can be halved in a 8x8 or 9x9 baking dish. Baking time will be less, around 30-40 minutes.

Biscuits & Gravy Casserole

Ingredients

For Gravy

  • 1 pound ground pork sausage
  • 4 ½ cups milk
  • ½ cup flour
  • 3 Tablespoons butter
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper

For biscuits

  • 2 7.5 ounce cans refrigerator biscuits or use our homemade drop biscuit recipe

Instructions

  • Heat oven to 350 degrees.Spray 13 x 9 inch glass pan with oil cooking spray.
  • Brown sausage in a medium sized pot; transfer sausage to prepared baking dish. Use a paper towel to blot out grease from sausage.
  • Add butter to sausage drippings in pot and melt over medium heat. Add flour, salt and peppers and stir to combine and create roux (mixture of fat and flour used to thicken many dishes). Cook 2-3 minutes until roux begins to brown.
  • Add milk a little at a time, whisking until smooth. Cook on medium-low, stirring often until thickened (several minutes). Pour gravy over sausage in baking pan.
  • Separate refrigerator biscuits and cut each into fourths OR, make homemade biscuit dough and divide into small portions. Top gravy with biscuit pieces. 
  • Bake 25-30 minutes until biscuits are golden brown. Serve warm.

French Toast Casserole

 

This recipe from Together as Family is such a good breakfast casserole! I love that I don't have to let this one sit overnight because I don't usually plan that far ahead haha! Enjoy! 

Ingredients

10 cups large cubed white bread *see notes below

2½ cups whole milk

6 large eggs

1½ teaspoon ground cinnamon

1½ teaspoon vanilla extract

4 tablespoons salted butter softened

1 cup light brown sugar

Instructions

Preheat oven to 350°. Prepare a 9x13 baking dish by spraying it really well with cooking spray.

Spread the cubed bread evenly into the prepared baking dish.

In a mixing bowl combine the milk, eggs, cinnamon, and vanilla extract. Stir together with a whisk until it's combined well. Set this bowl aside.

In a separate smaller bowl, combine the softened butter and brown sugar. Stir together to form a crumbly mixture.

Pour the milk and egg mixture over the cubed bread. Use your clean hands or a spoon to very gently stir and coat all the bread cubes in the milk mixture. Sprinkle the brown sugar crumble over the top.

Bake for 30-40 minutes or until the middle of the pan is set.

Let the French toast casserole cool for 5-10 minutes so it can set. Serve with powdered sugar, syrup, and fresh berries.

Cinnamon Sugar Air Fryer Donuts


This one from Kitchen Fun with my 3 Sons is one of our favorites! I actually cheat a little bit and don't make them a donut shape-I take each biscuit and cut it into fourths and cook those small triangles. We have lots of little mouths around here and the bite-size snacks work better! You decide what you like best!

Ingredients

1 can Jumbo Flaky Biscuits like Pillsbury Grands

1/2 cup granulated sugar

1/2 Tbsp ground cinnamon

5 Tbsp butter melted

Instructions

Preheat air fryer to 360 degrees. To do this, simply turn your air fryer on at 330 degrees and let it run for about 3-5 minutes.

In a medium bowl, mix together the cinnamon and sugar. Set aside.

Open the can of flaky biscuits and cut the center out of each one using a 1-inch round cutter. Lightly coat air fryer basket with coconut oil spray (you can also use olive oil spray). Do not use non-stick spray like Pam (those sprays could be harmful to your air fryer).

Place the donuts (not holes), in your air fryer. Bake for 5 minutes at 360 degrees. As the doughnuts are cooking, melt the butter.

Using a silicone pastry brush, coat the baked doughnuts with your melted butter. Then cover the donuts with the cinnamon sugar mixture by dipping and rolling around. Use a spoon to coat the top as well. Gently shake off excess cinnamon sugar. Serve doughnuts hot.

Donut Holes

When you air fry the “holes”, set your timer for 3 minutes and repeat the process of dipping in butter and then adding the cinnamon and sugar mixture.

Moist Sweet Potato Muffins





Had a ton of sweet potatoes to eat up and I Heart Recipes saved the day with this gem! My kids loved them!

Ingredients

Dry Ingredients

2 cups all purpose flour

3/4 cup granulated sugar

1/2 cup brown sugar

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

Wet Ingredients

2 medium sweet potatoes rinsed & scrubbed

2 large eggs

1/2 cup vegetable oil

1 tbsp heavy cream

1 1/2 tsp vanilla extract


Instructions

Bake the Sweet Potatoes:

Preheat the oven to 375 F.

Place the sweet potatoes on a baking dish, then place in the oven.


Bake the sweet potatoes until tender (about 35-45 minutes), then scrape out the meat of the potatoes.

Whip the potatoes until nice and creamy, then set to the side until it’s cool.

Prepare Muffin Batter:

In a medium bowl, combine the flour, sugar, cinnamon, nutmeg, baking powder, baking soda, and salt. Whisk until everything is well combined.

In another bowl, combine the oil, whipped sweet potatoes, eggs, milk, and vanilla extract. Mix thoroughly.

Add the wet mixture to the dry ingredients and fold to combine. (Note: the muffin batter will be thick!)

Using a scoop or 1/4 measuring cup, spoon the batter into the muffin pan.

Bake the Muffins:

Bake for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean

Let cool before serving. Enjoy!

Baked Oatmeal with Cranberries

 

We needed an easy, quick dinner tonight and my 10-year-old whipped this up all by herself and it was delicious!! Recipe from AllRecipes!

  • In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.

  • Bake in preheated oven for 40 minutes.

Easy Blueberry Muffins

This is a great blueberry muffin recipe to have on hand. My 10-year-old and her friend made these all by themselves and it was manageable for them and they turned out delicious! I got a great deal on frozen blueberries so this was a great way to use them up. Recipe and photo from Eating on a Dime.




Ingredients

1 1/2 cups all-purpose flour
3/4 cup granulated sugar plus 1 tablespoon for muffin tops
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 large egg
1/3 – 1/2 cup milk
1 1/2 teaspoons vanilla extract
6 to 8 ounces fresh or frozen blueberries about 1 cup frozen blueberries

Instructions

Preheat oven to 400º F

In a large bowl whisk flour, sugar, baking powder and salt,

Use a measuring cup that holds at least 1 cup and add vegetable oil, egg and then fill the cup to the 1-cup line with milk (about 1/3 to a 1/2 cup of milk).

Add vanilla and whisk until combined.

Add milk mixture to the bowl with flour and sugar then use a fork to combine. Do not over mix. (The muffin batter will be pretty thick).

Add blueberries and use a spatula or spoon to gently fold the blueberries into the muffin batter.

Divide the batter between the muffin cups filling about ½ full.

Sprinkle a little sugar on top of each muffin.

Bake for 15-20 minutes.

Glazed Chocolate Cake Donuts

I bought myself a donut pan and couldn't be more excited! I have loved trying out new donut recipes and this is our favorite so far! You will definitely want to double this recipe! (Photo and recipe from Sprinkle Some Sugar.

Prep Time: 10 minutes
Cook Time: 12 minutes
Yield: 20 donuts

Ingredients:

Chocolate Donuts:
2-1/4 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1 tsp baking soda
2 tsp baking powder
3/4 cup brown sugar
1/4 cup granulated sugar
1/4 tsp nutmeg
pinch salt
8 tbs unsalted butter, melted
3 eggs
1-1/2 cup buttermilk

Glaze:
1-1/2 cup confectioner's sugar
1 tsp vanilla extract
3-4 tbs milk

Instructions:

Preheat oven to 350 degrees. Grease a donut pan very well and set aside.

Whisk flour, cocoa powder, baking soda, baking powder, both sugars, nutmeg and salt very well. Add melted butter, eggs and milk and beat until mixture is smooth. Add batter to a ziploc bag and cut a corner off to pipe into donut pan wells. Fill them no higher than 2/3 of the way up so they don't bake over. Bake donuts for 12-13 minutes or until they are firm and spring back when you touch them. Pop them out of the donut pan and onto a cooling rack to cool until warm to the touch.

Whisk glaze ingredients in a small bowl and dip one side of warm donuts. Place on a cooling rack to allow glaze to dry. Glazed Chocolate Cake Donuts are best served immediately because they cannot be covered or the glaze will dissolve into the donuts.

Sheet Pan Pancakes

I got this recipe from hip2save and have slightly adapted it for a jumbo sized jelly roll pan (18"x26") or a larger group, like my family! If you have a regular sized jelly roll pan, 12"x16", use the amounts in parentheses!

32 oz. box of pancake mix (2 cups)
3 cups milk (1 cup)
6 eggs (2 eggs)
3 tsp. vanilla extract (1 tsp)

Optional ingredients:
2 bananas, sliced thin (1)
3/4 cup mini chocolate chips (1/4 cup)
10-12 strawberries, sliced thin (4-5), or other berry of choice.

Preheat oven to 425 degrees. Prep pan with parchment paper and spray with nonstick oil.

To a mixing bowl, add pancake mix, milk, eggs, vanilla. Whisk until smooth.

Pour batter onto sheet pan and smooth out until it covers the entire pan.

Top mixture with sliced banana and chocolate chips on one side and berries on the other side, if using those ingredients. Otherwise bake plain. Bake for 15 minutes or until cooked and slightly browned. Serve by cutting into squares. Top with powdered sugar and syrup.

Easy Freezer-Friendly Breakfast Burritos

We like to make big batches of these so my husband can eat one on his drive to work or my kids can quickly grab one in the morning before school. Recipe and picture from Are We There Yet?

Ingredients:

1 lb. Pork Sausage
1 Pkg. Hash browns (shredded or cubed)
8 to 12 Large eggs
1/4 cup milk
1 pkg. shredded cheese
salt and pepper to taste
1 to 2 pkg. flour tortillas (I used the soft taco size tortillas)

Brown sausage. Drain on a paper towel. Cook hashbrowns in the same skillet. 

While the hash browns are cooking - In a large mixing bowl, whisk eggs, milk, salt and pepper.

Add browned sausage back to the pan with the cooked hash browns.

Add the eggs to the sausage mixture and cook until the eggs are done, stirring gently.

After eggs are done - lay a tortilla on counter. Place egg mixture on tortilla. Top with cheese. Roll into a burrito.

Depending on how many eggs you use and how large you make each burrito, will determine how many burritos you will end up with. On the day I fixed these I used ten eggs and made twenty-two burritos.

Wrap the burritos in plastic wrap. Then place the wrapped burritos in freezer zip-lock bags. Place in freezer.

When you are ready to eat - take the number of burritos you want out of the freezer (we usually only do two at a time) - unwrap  (yes, I am making a big deal about this - if you have wrapped the burritos in plastic wrap you MUST unwrap them!) - place in a paper towel and warm ONE of the burritos for 45 seconds - take out - warm the second ONE for 45 seconds.  Then put the first one back in the microwave for another 30 seconds. Repeat for second burrito. 

I know this method of warming sounds strange, but we have found to be able to heat the burrito all the way through, this is the best way.

Serve with salsa, sour cream, or plain. 


Standard Muffin Recipe

This is a great recipe to have on hand when you want to whip up some easy muffins! My kids' favorites are when I add fresh blueberries or chocolate chips! This is a great freezer meal that I love to make for my kids' snacks or breakfasts...I double the recipe to make a whole bunch, then when they have cooled I put them in ziplock bags in the freezer and they can grab one out to warm up on the go! Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp. baking powder
  • ½ tsp. salt
  • ½ cup granulated sugar
  • 1 cup skim milk, or your preferred milk/milk alternative
  • 1 tsp. vanilla extract
  • 1 large egg
  • ¼ cup canola or vegetable oil
  • cooking spray

Instructions

  • Preheat oven to 400 degrees. Place muffin liners in a muffin tin and spray with cooking spray.
  • In a large bowl, add the flour, baking powder, and salt. Stir to combine.
  • In another bowl, add the sugar, milk, vanilla, egg, and oil. Whisk to combine.
  • Add the wet ingredients to the dry ingredients. Stir until just combined; batter should be lumpy. Do not over mix.
  • Fill the muffin liners 3/4 of the way up.
  • Add your favorite muffin flavors/additions (fruit, nuts, chocolate chips, oats, etc.). Take a toothpick and push the additional ingredients down into the batter and swirl them around a little.
  • Bake for 20 minutes. Let cool for 5 minutes before serving.

Notes

If you are going to use a muffin addition that is not very sweet, like blueberries, it would be a good idea to roll that ingredient around in a little bit of sugar before you add it to the muffin batter.
The baking powder will start to react as soon as the wet ingredients are added to the dry ingredients. So, it's a good idea to have all of your additional ingredients prepared (ie. fruit peeled and chopped) before the batter is made.

Southern Bread Pudding

This amazing recipe has been used in our house as Christmas breakfast for the past several years. It comes from one of my favorite families in Mississippi. I have tried many different bread pudding recipes, but this surpasses them all!

1 large loaf French bread, sliced into 1" thick pieces
1-1/2 cup sugar
1 can evaporated milk
1-1/2 cup milk
3 eggs, beaten
1 tsp vanilla
1/2 tsp cinnamon
1 stick butter, melted and cooled

*Spray pam in a 2x13x15 glass dish. Place bread slices in pan and pour mixture over top, covering all edges. (At this point you can refrigerate until ready to bake). Bake at 325 degrees for 20 minutes. While baking, combine:
1-1/2 cup sugar
1 can evaporated milk
2 eggs, beaten
1 tsp vanilla
1/2 tsp cinnamon
1 stick butter, melted
1/2 cup pecans, chopped

Remove from oven. Turn oven down to 300 degrees. Pour second mixture over the top and bake an additional 20 minutes. Turn on broiler and toast top. Mixture will be very puffy after baking and will fall when cool. Keep leftovers in the fridge!

Mini King Cakes




These are a perfect Mardi Gras treat for a crowd! My friend made these with her Kindergarten class and they loved it!!

Refrigerated cinnamon roll dough (tubes)
Cream Cheese
Pie filling/berries of choice

Roll out cinnamon roll dough, 2 for each, rolled together in a circle. Bake as directed on package. While they are baking, color icing green, yellow, purple. Frost warm cinnamon rolls, then put a dollop of cream cheese in the center and top with berries/pie filling. Enjoy!

Whole Wheat Pancakes

This recipe is from All Recipes and is a nice, basic pancake recipe using whole wheat flour. You could add in your favorites--nuts, cinnamon, chocolate chips, bananas, berries, etc, too.


Ingredients:
2 cups whole wheat flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups buttermilk
2 eggs
3 tablespoons vegetable oil
Directions:
1. Whisk whole wheat flour, sugar, baking powder, baking soda, and salt in a bowl. Whisk buttermilk, eggs, and vegetable oil in a separate bowl; pour buttermilk mixture into dry ingredients. Stir just until combined (batter may seem a bit thick).
2. Heat a cast iron skillet over medium-low heat for 5 minutes. Pour 1/3 cup of batter onto hot skillet and use a spoon to spread the pancake a bit. Cook until browned and bubbles appear on top, 1 1/2 to 2 minutes. Flip and cook until browned and set in the middle, about 2 more minutes. Repeat with remaining batter.

Healthy, Whole Wheat Blueberry Muffins

These were light and fluffy and not too sweet. My 4 kids devoured them! Thanks, Prevention RD for the recipe!

Ingredients
  • 2 cups whole wheat pastry flour or white wheat flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup sugar
  • 2 eggs
  • ¾ cup unsweetened vanilla almond or coconut milk
  • ¼ cup unsweetened applesauce
  • ¼ cup honey
  • 1 cup blueberries (fresh or frozen)
Instructions
  1. Preheat oven to 350 F. Line a muffin tin with 12 liners or lightly grease; set aside.
  2. In a large bowl, whisk to combine the flour, baking powder, and baking soda; set aside.
  3. In a medium bowl, whisk together the sugar and eggs until well-combined. Add the milk, applesauce, and honey; whisk well.
  4. Mix the wet ingredients into the dry with a spatula until moistened throughout. Fold in blueberries. Scoop batter evenly into muffin wells and bake for 18-20 minutes or until an inserted toothpick is cleanly removed. Allow to cool for several moments in the muffin tin before transferring to a wire baking rack to cool completely.

Breakfast Enchiladas

These were to die for and were perfect for our book club brunch! Recipe from Julie's Eats & Treats!

Ingredients
  • 1 lb sausage, browned
  • 2 cups shredded cheddar cheese
  • 8 (8 in) flour tortillas
  • 6 eggs
  • 2 cups half-and-half
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 3 oz package Real Bacon Bits
Instructions
  1. Spray 13x9 in pan with cooking spray
  2. In a large bowl stir together browned sausage, 1 c. cheese and 1/2 of the package of bacon bits.
  3. Place a 1/8 of the mixture down the center of a tortilla. Roll up and place seem side down in baking dish. Repeat until all tortillas are filled.
  4. In another large bowl beat eggs, half and half, four and salt. Pour over the tortillas in the pan. You can cover the dish and place in the fridge or baked immediately.
  5. When ready to bake, preheat the oven to 350 degrees. Uncover dish and sprinkle remaining 1 cup of cheese over tortillas. Sprinkle the rest of the bacon bits over cheese. Cover baking dish and bake for 35 minutes. Uncover dish and bake 10 minutes longer or until set and cheese is melted.

Healthier Banana Bread Muffins


Okay these may be low fat, but they are far from tasting like it! I've jumped on the 'coconut oil bandwagon' and these are wonderful! Just the right hint of coconut in them! I adapted this recipe from Mama's Weeds...I actually doubled her recipe and added less flour and less oil and omitted the milk...Give them a try! Banana muffins freeze really well, so if you wanted to double the recipe you could throw some in a ziploc for later, too!

1/4 c coconut oil, melted (or softened butter)
1 c sugar
4 very ripe bananas, mashed
2 eggs, beaten
2 c flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp. cinnamon
pinch of salt (if using unsalted butter or coconut oil)
1/4 c mini chocolate chips

Preheat oven to 375. Combine coconut oil (or butter) with sugar. Stir in beaten egg and mashed bananas. Add in dry ingredients and pour into muffin tins. (Lightly oiled.)
Bake muffins for 18-20 minutes. (I used a 1/4 c measure to scoop batter into muffin tins, this made 19 muffins).

Spinach Pancakes

My kids woofed these down and none of us could even tell the difference between these and regular pancakes! Totally worth it if you can squeeze in some greens somewhere with your kids, am I right?

1 cup packed fresh spinach (I had a bag of frozen and that worked, too)
1 cup buttermilk
1 large egg
1 T. oil
1 cup white whole-wheat flour
1 T. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt

*In a blender, combine spinach, buttermilk, egg, and oil until smooth, 30 seconds.
*In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Whisk wet ingredients into the dry ingredients until just combined.
*Cook over greased griddle!
