Freezing Herbs

Fall is upon us and herbs will not be so readily available for a while. Or if you're like me and get sick of store-bought herbs going bad too fast, here's a great solution! Finely chop your herb (parsley pictured), place in an ice cube tray and then pour olive oil over herbs until cubes in tray are full. Freeze until solid, pop out and put in a labeled ziploc! That's it! Then when you're ready to use, throw it in! I popped one of these into a pot of soup and it thawed within seconds and tasted fresh!
