Chocolate Waffles & Strawberry Sauce

My friend sent me this recipe and it was delish! I actually tried it out the day after she sent it, but kept forgetting to get it on here. You should definitely give this one a try! Even if you just tried the strawberry sauce, that alone would be amazing over regular waffles, pancakes, ice cream, etc!

1-1/4 C. flour
2 tsp. Baking Powder
1/2 tsp. Salt
6 Tbsp. Sugar
1/3 C. Cocoa Powder
1 C. Milk
2 Eggs, separated
1/4 C. Vegetable Oil
1/4 tsp. Vanilla
*Beat egg whites until soft peaks for, set aside. Sift all dry ingredients together
(or whisk them together). Beat egg yolk in another bowl for 1 minute, then
mix in milk, oil, and vanilla. Combine the dry ingredients with the milk
mixture. Stir only until blended. Fold in egg whites.
*Cook in waffle iron. This will make 4 Belgian waffles.

Strawberry Sauce
1 Pint Strawberries
1/3 C. White Sugar
1 tsp. Vanilla Extract (or Almond Extract, if you prefer)
*Wash Strawberries and remove stems.
*Combine berries, sugar and extract in a medium saucepan and bring to a
simmer over medium heat. Cook for five minutes, stirring/breaking
strawberries up with a wooden spoon constantly.
*After five minutes, remove from heat and allow to cool slightly (if you have
a glass blender jar) and a lot (if you have a plastic blender jar). When cool
enough, transfer mixture to blender and pulse until desired consistency is
reached.
**I have also used frozen berries. Just add about 1/3 C. Water to the pan,
so the sugar won’t burn in the pan.
