Elegant Smoked Salmon Strata

I made this for our late Father's Day breakfast. It was delicious, but I have a couple of notes--first of all, it makes a ton, so unless you have at least 8-10 people to serve, I would suggest cutting the recipe in half and cooking it in an 8x8 dish. Also, you better really like EGGS, otherwise you'll hate this. But if you do, this is a great breakfast or brunch idea, especially if you have company or a large group to feed. It's very fancy looking and seems like you spent a lot of time on it ;) I seriously felt like Bree Hodge from Desperate Housewives when I made this!

4 c. cubed ciabatta/French bread
2 Tbsp. butter, melted
2 Tbsp. olive oil
2 c. (8oz) shredded Gruyere or Swiss cheese
2 c. (8oz) shredded white cheddar cheese
10 green onions, sliced
1/2 lb. smoked salmon, coarsely chopped
8 eggs
4 c. 2% milk
4 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
Creme fraiche or sour cream and minced chives

*In a large bowl, toss bread cubes with butter and oil; transfer to a greased 9x13 baking dish. Sprinkle with cheeses, onions, and salmon. In another bowl, whisk eggs, milk, mustard, salt, and pepper; pour over top. Cover and refrigerate overnight.

*Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 for 30 mins. Uncover; bake 25-30 mins longer or until knife inserted comes out clean. Let stand for 10 mins before serving. Serve with creme fraiche/sour cream and chives.
