16.5 oz roll of chocolate chip cookie dough (I just made up a homemade batch of my Butter Crisco Cookie dough and separated out 16.5 oz, which is about 2 cups)
1 8oz package cream cheese, softened
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
Preheat oven to 350. Line an 8x8 pan with foil so that it hangs over the sides of the pan and spray well with nonstick spray.*Cut your roll of cookie dough into four equal pieces.
*Set one section of cookie dough aside. Press the rest of the cookie dough evenly into the pan.
In a medium mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth. Add sugar, egg, and vanilla, beating on low speed until smooth and well combined.
*Spread the filling evenly over the cookie dough crust. Dot with the remaining portion of cookie dough.
*Bake for 25-30 minutes or until top is light brown and filling is set. Cool completely before peeling off foil and cutting into bars. Store in the refrigerator--these taste so much better cold because the cheesecake-y part is set up! Mmmm...
