Apple Pie Cake

I was in the mood for a fall-ish dessert, and this was PERFECT! It was light and fluffy, but still sweet enough to satisfy my cravings. My husband, who usually prefers dark and rich desserts, even loved it!
4 eggs
2 c. sugar
2 c. flour
3-1/2 tsp. baking powder
1 c. walnuts/pecans
2-1/2 tsp. vanilla
1 c. olive oil
2 tsp. cinnamon
1/4 tsp. ginger
1 can Comstock Apple Pie Filling, drained
*Preheat oven to 350. Butter and flour a 9x13 inch pan.
*Combine eggs, sugar, vanilla, and oil. Stir in flour, baking powder, cinnamon, and ginger. Stir in drained apples and chopped nuts. Mix only until combined; to avoid a "tough" cake do not overmix.
*Bake for 1 hour. Remove cake from oven and brush with butter while still warm; sprinkle with cinamon sugar.
