Orange Chicken

This is really tasty! And it looks so pretty, you'll love it! And the best part is that it's only $1.85/serving!1-1/2 cups uncooked rice
1 Tbsp. + 1/3 cup cornstarch, divided
1 cup orange juice
1 Tbsp. soy sauce
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
1 lb. boneless, skinless chicken breasts, cut into 1-in. cubes
3 Tbsp. olive oil, divided
1-1/2 cups sliced carrots
1 cup chopped green pepper
1/2 cup chopped onion
*Prepare rice according to pkg. Meanwhile, in a small bowl, combine 1 Tbsp. cornstarch, orange juice, soy sauce, sugar, salt, and pepper; set aside.
*Place remaining cornstarch in a large Ziploc. Add chicken, a few pieces at a time, shake to coat. In large skillet over med heat, cook chicken in 2 Tbsp. oil 7-9 mins or until no longer pink. Remove and keep warm.
*In same skillet, sautee carrots in remaining oil for 2 mins. Add pepper and onion; sautee 2-3 mins, or until veggies are crisp-tender. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir for 2 mins or until thickened. Add chicken; heat through. Serve w/ rice.
