I got this recipe from hip2save and have slightly adapted it for a jumbo sized jelly roll pan (18"x26") or a larger group, like my family! If you have a regular sized jelly roll pan, 12"x16", use the amounts in parentheses!
32 oz. box of pancake mix (2 cups)
3 cups milk (1 cup)
6 eggs (2 eggs)
3 tsp. vanilla extract (1 tsp)
Optional ingredients:
2 bananas, sliced thin (1)
3/4 cup mini chocolate chips (1/4 cup)
10-12 strawberries, sliced thin (4-5), or other berry of choice.
Preheat oven to 425 degrees. Prep pan with parchment paper and spray with nonstick oil.
To a mixing bowl, add pancake mix, milk, eggs, vanilla. Whisk until smooth.
Pour batter onto sheet pan and smooth out until it covers the entire pan.
Top mixture with sliced banana and chocolate chips on one side and berries on the other side, if using those ingredients. Otherwise bake plain. Bake for 15 minutes or until cooked and slightly browned. Serve by cutting into squares. Top with powdered sugar and syrup.
