This amazing recipe has been used in our house as Christmas breakfast for the past several years. It comes from one of my favorite families in Mississippi. I have tried many different bread pudding recipes, but this surpasses them all!
1 large loaf French bread, sliced into 1" thick pieces
1-1/2 cup sugar
1 can evaporated milk
1-1/2 cup milk
3 eggs, beaten
1 tsp vanilla
1/2 tsp cinnamon
1 stick butter, melted and cooled
*Spray pam in a 2x13x15 glass dish. Place bread slices in pan and pour mixture over top, covering all edges. (At this point you can refrigerate until ready to bake). Bake at 325 degrees for 20 minutes. While baking, combine:
1-1/2 cup sugar
1 can evaporated milk
2 eggs, beaten
1 tsp vanilla
1/2 tsp cinnamon
1 stick butter, melted
1/2 cup pecans, chopped
Remove from oven. Turn oven down to 300 degrees. Pour second mixture over the top and bake an additional 20 minutes. Turn on broiler and toast top. Mixture will be very puffy after baking and will fall when cool. Keep leftovers in the fridge!
