This was a first (trying eggless pancakes), but it was out of desperation since I had promised the kids pancakes but when I opened the fridge there were no eggs! I probably won't ever use eggs again now! These were the perfect texture, cooked beautifully, and had a wonderful cinnamon flavor! For the life of me I cannot find the link where I got this recipe...sorry :(
2 cups flour
2 tsp. sugar
Pinch of salt
4 tsp. baking powder
2 tsp. cinnamon
2 Tbsp. oil
2 cups milk
2 Tbsp. water
2 tsp. vanilla
4 Tbsp. melted butter
Combine dry ingredients, then whisk in remaining ingredients. LET BATTER REST FOR 10 MINUTES. Cook on griddle.
