I got this recipe at the grocery store checkout the other day and we all loved it! It was a little too spicy for us, though, so next time I'll add a little less cayenne pepper and basil.
1 lb. skinless chicken tenders/breast
1/4 c. olive oil
2 green onions, finely chopped
2 Tbsp. chopped garlic
1/2 tsp. cayenne pepper
2 lemons, juiced
1/4 c. chopped fresh basil
salt & pepper to taste
*Heat olive oil in a large frying pan. Add chicken, green onions, garlic and cayenne; stir fry for 5 minutes or until lightly browned and cooked through. Add lemon juice and basil, then salt and pepper to taste. Garnish with fresh cilantro or parsley and a lemon slice. Great over rice or inside tortillas.
