This is one of my new favorite recipes! So delicious and easy! I got this recipe from Prudence Pennywise, you can see her picture of it there. I did make a couple minor changes to the recipe.
2 lbs. boneless, skinless chicken breasts
2 (14-ounce) cans petite or regular diced tomatoes, drained
2/3 c. brown sugar
1/2 tsp. crushed red pepper flakes
*Place chicken in slow cooker. In a small bowl combine the tomatoes, brown sugar and red pepper flakes. Pour over chicken. Cover the slow cooker and cook on high 4-6 hours.
*Shred chicken with two forks. Return to the slow cooker and mix chicken with the juices from the tomato/brown sugar sauce. Season with salt and pepper to taste. Serve in flour tortillas or over tortilla chips with toppings of choice: lettuce, sour cream, cheese, avocados, etc.
